Albondigas

Ingredients:

(Cod fish meat balls)- Serves 4 as part of a meal, with soup and salad.  Ingredients: ¼ kilo cod fish, soaked in cold water overnight; 2-3 potatoes, peeled and boiled; 5-6 peppercorns; 1 Tb. cumin; 4-5 garlic cloves; 2-3 parsley sprigs; 3 eggs, beaten; 2 Tbs. bread crumbs.  A plate of flour.  Olive oil for frying.

Preparation:

Mash the potatoes in a bowl.  Drain the fish and mash it in a separate bowl.  Use a mortar and pestle to crush the peppercorns, cumin, garlic, and parsley.  Take the spices out with a spoon and mix them into the potato.  Mash the fish and the bread crumbs into the potato mixture.  Add the eggs and blend into the mixture.  Use your hands to form balls, dip each ball in the flour, and then fry.  Make small balls so that they cook all the way through by the time they are browned.  Add salt to taste.  Serve warm.
