These are the recipes for some of the dishes that I consider most common on Spanish tables. These are my mother's versions of these recipes, which were passed down to her by her mother.  You should note that each region has its own version of some of the dishes; these are from Toledo, from the Castilla de la Mancha region.

This is something that you will find in every bar in Spain. It is a creation of egg and potato.

The typical stew of Spain.  Each region has their own version, like paella.

As easy to cook as cocido, lentil soup is a healthy dish that will give you energy.

A flavorful dish of meat, vegetables, and wine.  Can be made with chicken.

A salty plate with cod, green pepper and tomato sauce. Sounds crazy... try it and you will see...

Roast lamb.  Typical of Castilla la Mancha.  Use leg of lamb for this recipe.

The Spanish version of marinated red peppers.  Served with egg and tuna, a hearty side dish.

Stew made frequently at Easter time.  Made with garbanzos, fish, and spinach.

A dish for Easter time.  Meatballs made with codfish and potato.  Make lots- they go fast.

Sort of like potato salad, this is rice salad.  It can serve as a meal or a side dish.

Follow the safety instructions for the mussels.  Serve with bread for dipping in the wonderful sauce.

Sword fish, grilled with spices.  Best made with a steak of fresh fish, served with lemon.

Snails

People eat snails in Spain, like in France.  If you can't bring yourself to eat the snail at least try the sauce.

Lorenza's secret recipe.  Made with cookies soaked in sweet wine, and cream.

The typical Spanish dessert.  Served in restaurants throughout Spain.  Easy to make, with few ingredients.
